The staples of the day were sliced white bread, milk with lots of meat and potatoes smothered in gravy. Most people today believe food today is less healthy than in past generations. However, except for one significant difference, the food eaten during the "Happy Days" generation was actually less healthy. Today, consumer protection laws ensure that our food is better inspected, regulated and labeled for nutritional content and contain less harmful amounts of pesticides, insecticides and trans fats. Foods today are basically still prepared and eaten the same way they always have. So, if consumers are generally eating healthier food than past generations, what has changed? Why are people today becoming afraid to eat bread, milk and meat. Why are we being told by health professionals that eating gluten is bad for you or we shouldn't eat too much sugar, salt or charred or processed meats? These foods never made people sick in the past so why are they making consumers sick today?
As a septuagenarian (over 70 years old), I have a unique perspective on today's popular diets. These foods never made people sick in the past so why are they making consumers sick today?
As a septuagenarian (over 70 years old), I have a unique perspective on today's popular diets. This report looks at the EWG’s “Dirty Dozen” report and finds a number of fundamental flaws in it’s methodology. The Journal of Toxicology says the EWG rankings were derived from information of the United States Department of Agriculture (USDA) Pesticide Data Program (PDP) and the US (FDA) Pesticide Program Residue Monitoring program.
According to JOT’s report, EWG merely looked at the numbers and types of pesticides found to be used on 49 of the most frequently consumed fruits and vegetables without quantifying consumer risk exposure (food consumption or residue levels). Also missing from EWG’s report was any consideration was how the established exposure levels of a pesticide were calculated or applied. Pesticide contamination regula- tions are usually established using animal toxicity studies… with the maximum levels for any human exposure set to be 1000 times less than, for example, a dog exposed to the pesticide for one year without adverse health effects. For the purposes of this study, the chronic exposure limits were based on a calculated estimate of the amount of chemical a person could be exposed to on a daily basis throughout a person’s life- time that is likely to be without an appreciable risk of harm. In the pesticide exposure table for apples shown in the image below, the “Mean exposure ( ug/kg/day )” is the computer estimated daily exposure expected per person. The “Reference dose ( ug/kg/day )” is the regulated maximum daily dose a person is allowed to con- sum without harm. The “Ratio--- reference dose to mean exposure” amount is the ratio between what the expected pesticide contamination would be compared to the maximum allow- able amount.

Of course conspiracy buffs always question the motives and effectiveness of government agencies. But what about lifehacker.com’s website Why You Shouldn’t Buy Organic Based on the “Dirty Dozon” list , this information (condemning EWG’s tactics) raises some interesting questions. Digging a little deeper, we found NCBI (The National Center for Biotechnology) a science based website dedicated to publishing scientific research including the Journal of Toxicology (JOT) report Dietary Exposure to Pesticide Residues from Commodities Alleged to Contain the Highest Contamination Levels. This report looks at the EWG’s “Dirty Dozen” report and finds a number of fundamental flaws in it’s methodology. JOT (the Journal of Toxicology) says the EWG rankings were derived from information of the United States Department of Agriculture (USDA) Pesticide Data Program (PDP) and the US (FDA) Pesticide Program Residue Monitoring program. According to JOT’s report, EWG merely looked at the numbers and types of pesticides found to be used on 49 of the most frequently consumed fruits and vegetables without quantifying consumer risk exposure (food consumption or residue levels). Also missing from EWG’s report was any consideration was how the established exposure levels of a pesticide were calculated or applied. Pesticide contamination regulations are usually established using animal toxicity studies… with the maximum levels for any human exposure set to be 1000 times less than, for example, a dog exposed to the pesticide for one year without adverse health effects. For the purposes of this study, the chronic exposure limits were based on a calculated estimate of the amount of chemical a person could be exposed to on a daily basis throughout a person’s life-time that is likely to be without an appreciable risk of harm. In the pesticide exposure table for apples shown in the image below, the “Mean exposure ( ug/kg/day )” is the computer estimated daily exposure expected per person. The “Reference dose ( ug/kg/day )” is the regulated maximum daily dose a person is allowed to con-sum without harm. The “Ratio--- reference dose to mean exposure” amount is the ratio between what the expected pesticide contamination would be compared to the maximum allowable amount. For example: In the image, for the pesticide Acetamiprid, The Mean (actual) exposure is calculated to be 0.00389 micrograms per day and the Reference dose of safe allowable exposure is set at 100 micrograms per day. By dividing the safe allowable amount (100) by the estimated actual exposure (0.00389) it can be calculated that the estimated consumption amount is 1/25700 or 25700 times less that the allowable amount (or 0.003% of the safe allowable amount). Using these calculations it can be seen that the actual pesticide contamination compared to the safe maximum exposure (proven by scientific research) indicates a large measure of consumer protection. This same data shows that the risk to health, posed between the difference of consuming commercially grown or organic produce, is negligible. Of course it can always be argued that any amount of pesticide contamination is too much, however, the whole point of this article is to show that there is a much greater health risk associated with not eating fruits and vegetables, because of a fear of pesticides, than the threat actually posed by consuming the pesticides. Therefore eating the “Dirty Dozen” is more nutritionally beneficial than a dangerous health risk.
If you don’t think poison in our food is a big enough challenge for us to face… then brace yourself for some more bad news. Some supermarkets are putting our health at risk by repackaging spoiled food and food past it “best-before-date” and then adding a new best-before label. A number of supermarket whistle-blowers have been interviewed or submitted emails telling about how they were “bullied” or coerced into repackaging and re-dating out of date food for fear of losing their jobs. As an example, a bakery clerk at one store was told to remove old and moldy toppings and add new toppings to cheesecakes, having passed their best-before dates, making them appear fresh. Then new best-before dates were added to the cakes and put back on the shelf. After decorating, he would sell the cakes at a higher “value added” price to customers… cakes that he would never eat himself. The practice of re-dating products was reported in a number of different grocery stores and supermarkets (both chains and independent), from people working or have worked in meat, bakery and produce departments and they describe a number of tricks that supermarkets use to make old food appear fresh. Some of those tricks include grinding old meat with fresher meat, marinating old meat with sauces to mask the smell, cutting mold off fruit and vegetables and packaging them in party trays, and cutting cakes in half to promote quick sales after the best-before date has passed.
